# Paul Bruggemans: The Man Who Made Dinner Feel Like an Occasion

**PALM SPRINGS — Some restaurant owners build businesses. Paul Bruggemans built a ritual.**
For generations of Palm Springs diners, an evening at **Le Vallauris** was never simply about ordering dinner. It was about entering a particular world — an old Palm Springs world of gracious service, lingering conversations, white tablecloths, a garden patio and the feeling that the person running the room actually cared whether you were having a memorable night.
Bruggemans, the founder of Le Vallauris and one of the figures who helped define fine dining in the Coachella Valley, died September 15 at age 89.
His passing closes a chapter in Palm Springs restaurant history that is increasingly difficult to reproduce.
Born in Belgium in 1936, Bruggemans came to California in 1960 and eventually made his mark in the restaurant world. Before Le Vallauris, he co-owned the celebrated **Le St. Germain** in Los Angeles. In 1973, Bruggemans and business partner Camille Bardet came to Palm Springs looking for the right location and found it in the historic Robertson house, built in 1924.
What followed became part of Palm Springs lore.
Le Vallauris developed into one of the desert’s signature dining rooms, known for French-inspired food, an elegant garden setting and a degree of hospitality that felt almost European in its attention to detail. It was the kind of place where birthdays, anniversaries, business dinners and romantic evenings acquired a little extra ceremony.
But the restaurant’s reputation was inseparable from Bruggemans himself.
His husband, **Omar Haddedou**, told The Desert Sun that Bruggemans remained intensely involved in the operation and was regularly present during lunch and dinner, circulating among guests and making certain the experience met his standards.
That may be the most important part of his legacy.
Bruggemans belonged to a generation of restaurateurs who believed the owner should be visible. He did not simply manage from an office or study spreadsheets from afar. He watched the room. He greeted people. He noticed details. And he understood that people often remember how a restaurant made them feel long after they have forgotten exactly what they ordered.
That philosophy helped Le Vallauris endure for decades while Palm Springs changed dramatically around it.
The city became younger, more international, more design-conscious and increasingly fashionable. Restaurants came and went. Tastes changed. Neighborhoods evolved. Yet Le Vallauris retained something of the Palm Springs that originally made the desert famous: sophistication without hurry.
Even in recent years, the restaurant continued to draw recognition, including a place on OpenTable’s 2024 list of the nation’s most romantic restaurants.

Bruggemans and Haddedou were together for nearly 30 years and married for 13. Haddedou recalled Bruggemans as kind, caring and capable of putting people at ease — qualities that also explain much about the atmosphere he created professionally.
That is why Bruggemans’ death feels larger than the loss of a successful restaurateur.
He represented an approach to hospitality that depended on presence, personality and standards. There was no app for it. No algorithm. No substitute for the owner walking through the dining room, recognizing a familiar face and making a guest feel, for an evening, that this particular table mattered.
Palm Springs has lost one of the people who helped teach the city how to dine.
